Freddy’s co-founder leading franchise expansion at Mokas Coffee & Eatery

Under the direction of board president Scott Redler, co-founder of Freddy’s Frozen Custard & Steakburgers, Mokas Coffee & Eatery has signed its first franchisee, Christian Coleman.

“Scott set ambitious goals from day one and has delivered on every expectation,” Jason Ingermanson, founder and CEO of JRI Hospitality, the company behind Mokas, said in a company press release. “We are thrilled to welcome our first franchisee, Christian Coleman, and look forward to the continued growth and success of the Mokas brand together.”

Since opening its first Mokas Coffee in Salina, Kansas, in 2005, Mokas has rebranded from a small coffee shop to Mokas Coffee & Eatery, a fast casual dining experience with multiple locations in Kansas and Arizona.

Coleman secured territorial rights to counties in Kansas, including Johnson, Douglas and Shawnee, which encompass parts of the Kansas City area, Lawrence and Topeka. He’s exploring six development options, hoping for a grand opening by spring 2026.
